Ingredients:
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground ginger
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 cup unsalted butter, softened
- 1/2 cup packed brown sugar
- 1 large egg
- 3/4 cup molasses
- 2 teaspoons vanilla extract
Instructions:
- In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves. Set aside.
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy. You can use an electric mixer or do it by hand with a wooden spoon.
- Add the egg to the butter and sugar mixture and beat well. Then add the molasses and vanilla extract, and mix until everything is well combined.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing well after each addition. Continue mixing until the dough comes together and is thoroughly combined. It may be a bit sticky, but that's okay.
- Divide the dough in half and shape each portion into a disk. Wrap each disk in plastic wrap and refrigerate for at least 1 hour, or until the dough is firm.
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Take one disk of dough out of the refrigerator. On a lightly floured surface, roll out the dough to about 1/4 inch thickness. Use gingerbread cookie cutters to cut out your desired shapes and place them onto the prepared baking sheets, leaving some space between the cookies.
- Bake the cookies in the preheated oven for about 8-10 minutes, or until the edges are lightly browned. Keep in mind that the baking time may vary depending on the size and thickness of your cookies, so keep an eye on them.
- Once baked, remove the cookies from the oven and let them cool on the baking sheets for a few minutes. Then transfer them to a wire rack to cool completely.
- Repeat the rolling, cutting, and baking process with the remaining dough until all the cookies are baked.
